Lower Carb Alternatives to Rice, Couscous, Bulgur, Millet, and Semolina

Some of these alternatives are really low carb. Some, like lentils and mung beans, do contain a certain amount of carbs, but at least not as much as grains, and are a good alternative for dishes such as linsotto (lentil risotto).
