Yes, Québécois do eat Poutine, Texans do love their barbecue (especially brisket), you can get some great Nashville hot chicken, a Hot Brown in Kentucky, eat until you drop at a Vegas buffet, grab a slice of New York pizza (or Chicago deep dish) or a lobster roll along the East Coast, and crab along the West Coast, all at some very famous restaurants. But it's quite likely you'll be surrounded by other tourists. However, there are exceptions to this rule - Philly residents love their cheesesteaks, and the people of New Haven (the birthplace of North American style pizza) have their go-to place for apizza (pronounced "ah-beets", like it's supposed to be), and are fiercely loyal to their favorite.
